The shells of shrimp are attached in such a way that neither forks and knives nor chop sticks can deal with them. The Chinese use their hands as do many others. Popular methods are to grip the tail carefully and then yank the shell off, sometimes it takes more tail meat than it should. The slow careful way is, rip the head off and avoid the guts, then along each side disconnect the shell's connection to that side, repeat along the other side and then you'll be done.
